Fresh basil pesto, crusty french bread & roasted chicken turned into a sandwich. I’ll say yes to that! I turned plain and ordinary (not that there is anything wrong with that) roasted chicken into a super flavorful pesto chicken salad. I added it to toasted french bread and topped it off with baby spinach and roma tomatoes. It was filling without being to heavy and totally hit the spot.
Toasted Pesto Chicken Salad Sandwich
1 loaf of good Italian bread, sliced
2 roasted chicken breast, diced or shredded
1/4 – 1/2 cup of basil pesto (homemade or store bought) start with 1/4 and go from there. Pesto can be quite salty from the parmesan cheese in it so if you want more flavor use the 1/2 cup
2 tbsp of light mayo
freshly cracked pepper
roma tomatoes, sliced
In a bowl add the chicken, pesto, mayo and pepper mixing well. Set aside.
Heat a cast iron pan (or a non-stick pan) over medium-high heat. Spread 2 slices of the french bread with butter. Toast the bread in the pan until it has a nice char or until it’s a golden brown color.
Spread the chicken salad over one slice of the toasted bread. Add the baby spinach, tomato and top with other slice of bread.
