Simple Dinner Salad

Turn these boring greens into......

a yummy dinner salad











I found these greens at Whole Foods (Organic Girl “Super Greens”) on sale so I grabbed them. It’s a mixture of  baby red chard, baby tat soi, baby spinach, baby green swiss chard, baby arugula. I wasn’t sure how all these different flavors were going to mix together so I made a salad for dinner. I just threw in all the veggies I could find hiding in the fridge and also crumbled some feta over the top. To my surprise it was a REALLY good salad! Sometimes simple things are so good.

Dinner Salad:

A few GOOD handfulls of greens (whatever you want: baby spinach, chopped romaine, arugula)

Chopped cucumber

Sliced red onion

Sliced green & red bell peppers

Cherry tomatoes, halved

Good quality feta cheese (crumbled)

A good sprinkle of Oregano on the top

Sliced black olives ,I would have added these but I was out :(

I used a red wine vinegar on my salad but I’m sure just about any dressing would be good on this.

Arrange the greens in a bowl, Top with all the fresh veggies. Add crumbled feta and sprinkle oregano over the entire salad. If you know me you know I have an obsession with good garlic bread. This would be great on the side plus you can soak up the dressing after you eat the salad. Heck yeah!
